Bake with brown bananas: Banana bread
Lots of people throw away bananas when the skin is brown, but it's at this time that bananas are the best to bake with.
Rich in potassium, fibre, vitamin B6 and vitamin C, bananas really are a great, healthy snack for kids and adults alike.
Ingredients:
3 ripe, brown skinned bananas.
125g self-raising flour (wholemeal or white).
½ tsp baking powder.
1-2 tsp ground cinnamon.
75g sultanas or raisins.
1 egg.
50g butter, melted.
A dash of milk.
Method:
Adults: Preheat the oven to 180C / 160C fan / gas mark 4.
Grease and line a 450g loaf/1lb tin with baking parchment.
Weigh the butter and warm it on the hob in a small pot until it turns to liquid.
Kids: Weigh out all the remaining ingredients and add them to a mixing bowl, adding the melting butter.
Mash the bananas in the bowl and mix all the ingredients thoroughly using a wooden spoon.
Pour the mixture into the prepared tin and bake for 30-40 minutes, or until a skewer comes out clean from the centre.
Remove the tin from the oven and allow to cool for 10 minutes, before turning it out.
